Since 2021, 5th Quarter—led by owner and butcher Josh Turka—has been all about putting high-quality local meat on your table. Working directly with Vermont farmers who care deeply for their animals and land, they do their best to honor their commitment by focusing on whole-animal butchery and true nose-to-tail use.

The butcher shop started as a store within a store, and today you’ll find Vermont-raised fresh beef and pork cut to order by a skilled and knowledgeable team along with a rotating lineup of more than 80 varieties of housemade sausages and fan favorites like hot dogs and maple bacon. You can find 5th Quarter on restaurant menus and in specialty shops all over Vermont and the Northeast.

In 2025, 5th Quarter Butcher Shop expanded into 5th Quarter Butcher + Provisions, a specialty food destination offering a well-curated mix of local favorites and standout selections. The cheese counter remains a destination with the largest collection of artisanal cheeses available for sampling anywhere in Vermont, all cut-to-order and ready to be paired with housemade charcuterie like pork rillettes, pâtés, mortadella and jambon blanc.
